Ever been caught between two recipes and wanted to see what’d happen when you combined the two? I think this is how most of my hidden gems are found.

 

What You’ll Need:

  • 6-8 Ribs
  • 1 1/2 Cup of Cauliflower
  • 1 1/4 Cup of Chicken Stock (1/4 cup for cauliflower)
  • Salt/ Pepper
  • 1 1/2  tsp Cumin (1/2 tsp for cauliflower)
  • 1 1/2 tsp Oregano  (1/2 tsp for cauliflower)
  • 1 tsp Paprika
  • 1 tsp Dry Mustard
  • 1 tbl Cider Vinegar
  • 1/4 Cup Olive Oil
  • 1 1/2 tsp Garlic

Sweet and Spicy

Sweet and Spicy

I find when mixing sweet potatoes into some meals, it can be overpoweringly sweet. So I was hoping to create a meal that I wouldn’t get “sick of” two bites in per se.

What You’ll Need:

  • Shrimp (precooked or non-cooked)
  • Scallops
  • Spinach
  • 1 Tomato
  • 1 Tsp Garlic
  • 1 Sweet Potato
  • 1/2 Tsp Pepper
  • 1 Tsp Cajun
  • 1/2 Tsp Paprika
  • 1/2 Onion
  • Cinnamon (to lightly spread over sweet potatoes)

Healthy Sweet Potato Balls

A dessert recipe couldn’t get any easier. 

What You’ll Need:

  • 1 Cup of Mashed Sweet Potato
  • 1/4 Teaspoon of Ginger
  • 6-8 Pitted Dried Dates
  • 1 Cup of Walnuts
  • 1 Cup of Pecans
  • 1/2 Teaspoon of Nutmeg
  • 1 Teaspoon of Cinnamon
  • 1 Cup of Dried Apples
  • Almond flour to roll balls in (might not need)

Stuffed Meatballs – Wrapped in Bacon

Bacon just makes everything better, it’s that simple. 

 

What You’ll Need: (one serving)

  • 1lb of Ground Beef
  • 3 Strips of Bacon/ Bacon Grease
  • 2 Peppers
  • Medium Zucchini
  • 1/2 Tomatoes
  • 1/2 Onion
  • Tsp Ground Cumin
  • Tsp Garlic
  • Salt/ Pepper

Stuffed Sweet Peppers

Sausage filled Sweet Peppers

 

I didn’t have a lot of time today to make my lunch, so I came up with this simple idea. I took sweet peppers and decided to stuff it with some sweet sausage and (honestly) threw in some of the greens I had to use before they went bad. And voila, this is what came of it.

 

What You’ll Need:

  • 2 Sweet Peppers
  • 1/2 lb of Sweet Sausage
  • Basil
  • Asparagus
  • Spinach
  • Salt/ Pepper

Lemon Pepper Shrimp

Lemon Pepper

Cauliflower “couscous” takes less than 3 minutes to make… I kid you not. And this meal takes less than 25 to prep, make, and do the dishes- if you’re like me and wash as you go.

 

What you’ll need: (single serving)

  • – Handful of Cauliflower
  • – 1 Cup of Spinach (10-15 leaves)
  • – 1 Tablespoon of Garlic
  • – Water Chestnuts
  • – 1 Fresh Lemon (for juice and to peal)
  • – 4 Asparagus
  • -Dash of Extra Virgin Olive Oil
  • – Mrs Dash Lemon Pepper Spices
  • – 6-10 Medium Shrimp

Easiest Snack Ever – Apple Chips

I found myself wanting something crunchy to snack on – or to accompany my lunches during the day.

I came across this and saw how simple it was and decided why not try it out?
