Cauliflower Encrusted Shrimp

No Breadcrumbs Needed

…and I’ve officially seen the light!! 

What more could you ask for??? I can bake almost anything in cauliflower! Who needs breadcrumbs?

Ingredients needed: *used pre-cooked shirmp meal if making on the fly

– Fresh or Pre-cooked shrimp (pre-cooked works fine because the cauliflower doesn’t need a long time to cook)

-Cauliflower (use blender/ food processor to create breadcrumb texture)

-Cajun, onion powder, garlic salt, basil, rosemary, salt, and pepper

-Extra virgin oil

-Medium Zucchini

-1 Egg

How to Cook Zucchini: 

-Preheat Oven at 375

-Cut Zucchini (like french fries!)

-In a bowl mix the zucchini fries with the spices (Onion powder, garlic salt, basil, rosemary, salt, and pepper)

-Add Oil to that (1.5 teas)

-Place on a cooking sheet

-Cook for 30-40 minutes (I like mine crispy)

How to Cook Shrimp:

– Put Cauliflower in the food processor/ blender

-Add Cajun, onion powder, garlic salt, rosemary, salt, and pepper to mixture

– Crack Egg in separate bowl

-Dip Shrimp in Egg bowl (I’d recommend dedicating one hand for egg bowl one for “batter”)

-Toss around Shrimp in Cauliflower mixer

-Place on baking sheet

-Cook for 5-10 minutes (if pre-cooked)

*IF fresh shrimp, cook for 10-15 minutes (until pink)
