Lemon Pepper Shrimp

Lemon Pepper

Cauliflower “couscous” takes less than 3 minutes to make… I kid you not. And this meal takes less than 25 to prep, make, and do the dishes- if you’re like me and wash as you go.

 

What you’ll need: (single serving)

  • – Handful of Cauliflower
  • – 1 Cup of Spinach (10-15 leaves)
  • – 1 Tablespoon of Garlic
  • – Water Chestnuts
  • – 1 Fresh Lemon (for juice and to peal)
  • – 4 Asparagus
  • -Dash of Extra Virgin Olive Oil
  • – Mrs Dash Lemon Pepper Spices
  • – 6-10 Medium Shrimp

How to make it: 

  1. Put Cauliflower in food processor (till you have the couscous texture- I have a Ninja and it takes 10 seconds)
  2. In a frying pan, heat up a dash of oil, 1/4 cup of water, lemon juice (used half of a lemon), lemon peals, Mrs Dash, and  garlic
  3. Add cut asparagus and cook for 4 minutes (add uncooked shrimp at this time)
  4. Add Spinach, water chestnuts, and pre-cooked shrimp
  5. Place Cauliflower in microwave for 2 minutes
  6. Put the shrimp and veggies on top of the cauliflower/ the leftover sauce is nice poured over the top, gives the cauliflower a nice taste.
