Banana Strawberry Pancakes – Muffin Style

 

So originally I had planned on making pancakes, but the first one didn’t flip as well so I had to improvise.

I placed the batter in mini muffin tins to baked them and honestly it was a blessing in disguise. Instead of having to stand there and wait to flip the pancakes this am, I could just put the “muffins” in the oven, and get back to getting ready.
